Early Sunsation is a hybrid bell pepper whose fruit ripens from dark green to a strikingly bright golden-yellow, the brightest yellow reported for a bell pepper. The large, blocky fruits are thick-walled, crisp, and juicy, reaching roughly four and a half inches long and wide. The flesh is sweet and crisp-textured, good eaten raw or cooked, with the sweetness most pronounced once the fruit is fully yellow-ripe.
Uses
The large, blocky fruit are well suited to stuffing as well as slicing for salads and stir-fries, making them a versatile choice for both raw and cooked preparations.
Performance
Early Sunsation matures earlier than other yellow bell pepper varieties, reaching green maturity in about 65 days before ripening on to full golden-yellow at around 80 days. Its vigorous plants produce enough foliage to help shade the developing fruit during hot summer months. The plants are also high yielding, easy to grow, and show good resistance to disease.
