Variety details
Distinguishing Traits
Yukon Gold is a large potato cultivar with thin, smooth skin that carries a gold to light brown tint and is relatively free of eyes, though flecked with small brown spots. Beneath the skin lies a dense, golden-yellow flesh with a moist, waxy consistency before cooking. Cooked, it turns creamy and tender, carrying a rich, buttery, earthy flavor that has made the variety renowned for its taste.
Uses
Yukon Gold's texture makes it well suited to almost any preparation, working equally well mashed, roasted, baked, or fried. Cooks have long treated it as an all-purpose potato that performs reliably no matter the method chosen.
Performance
Yukon Gold is an excellent keeper, holding its quality well after harvest, though its dormancy period is comparatively short, which suits it especially well for fresh eating rather than extended seed storage. The variety carries no strong disease resistance and is documented as susceptible to numerous diseases, including blackleg, early and late blight, several rots, and PVY virus.
Historical Origin
Yukon Gold was developed in Canada, with breeding work beginning in the early 1960s to cross a North American white potato with a yellow-fleshed potato tracing to South American stock. That effort produced a specific 1966 cross between the breeding line W5289-4, itself derived from 'Yema de huevo' and Katahdin, and the North Dakota variety 'Norgleam'. When it reached the market in 1980, Yukon Gold became the first Canadian-bred potato to be promoted and sold under its own name printed directly on the package, rather than simply being described by color.
