Jalapeño M is a dark green, medium-sized chile that eventually ripens to red, prized for its thick, crisp walls and pronounced heat. The pods are tapered and cylindrical, sometimes slightly curved with a blunt end, typically running three to five inches long. Its flesh is smooth, firm, and juicy, carrying a spicy, pungent aroma alongside the heat. Cooks and growers describe the flavor as intense, valued both for pungency and for a brightness that pairs well with smoky notes.

Uses

Green Jalapeño M fruit are the classic choice for fresh eating, pickling, and sauces, while fully ripe red fruit can be dried instead of eaten fresh. Cooks reach for it in nachos, salsas, and pickling, where its Scoville rating of about 12,000 places it among the hotter jalapeños. It also holds up well roasted, sliced, and simmered into sauces. Once its ripe red fruit is dried and smoked, it becomes the chipotle peppers common in Latin American and Hispanic cooking.

Jalapeño M fruit begin green and ripen through dark red, developing brown cracks once a pod turns woody past its prime, so timely picking preserves quality.
